Cook the noodles following packet directions. Combine the lime juice and fish sauce in a small bowl.
Heat a large non-stick frying pan or barbecue plate over medium heat. Brush with the oil. Add the skewers and cook, turning occasionally, for 10 minutes or until cooked through. Thread the meat off the skewers and place on a serving plate.
Meanwhile, arrange the noodles, cucumber, carrot, coriander and mint on a serving platter. Place the rice paper sheets on a plate beside a large bowl of warm water.
To assemble, dip the rice paper sheets into the bowl of water for 10-20 seconds or just until soft. Place the mint, noodles, cucumber, carrot, coriander and chicken in the middle. Fold up the sides and roll up to enclose. Serve with the sauce for dipping.
