Sesame seed rice crackers
Sesame Seed Rice Crackers
Prep time: 20 minutes Cook time: 30 minutes Serves: 20 (makes 40 crackers)
Ingredients
1¾ cup of rice flour
½ teaspoon of sea salt
¾ teaspoon of baking soda
5 tablespoons of black or white sesame seeds
2 tablespoon of coconut oil, melted and cooled
2 eggs, beaten
Method
Preheat the oven to 180°C
Line a baking tray with baking paper and set aside
In a large bowl combine the flour, salt, baking soda and seeds, and mix well
Create a well in the centre of the dry ingredients and add the coconut oil and the eggs
Knead the dough with your hands for about 2 minutes so it holds together without crumbling
Add small amounts of lukewarm water (if required) to help it stick together if the mixture gets crumbly
Place the dough between two sheets of baking paper and roll with a rolling pin until about 0.5cm thick
Using a knife or pizza cutter cut the dough into your desired shape and place on the baking tray about a finger space apart
Bake for 30 mins until slightly golden golden and dry to touch
Place on a wire rack to cool, then serve with your favourite dip.
