Types of rice
There are over 40,000 different varieties of rice that grow on every continent of the world except Antarctica. There are 2 main types of rice: short grain and long grain. Every type of rice fits into one of these categories.

Arborio
Arborio rice originated in Italy and is a short grain variety. When cooked, Arborio rice is creamy and chewy so it is commonly used to make Risotto, an Italian rice dish.
Jasmine Rice
Jasmine Rice is a fragrant, long grain variety which originated in Eastern Thailand. Jasmine rice has a distinct nutty flavour and is commonly used in stir-fry dishes, as well as desserts and salads.
Japanese Sushi Rice
Japanese sushi rice is a short grain variety commonly used in sushi, a traditional Japanese dish with a filling wrapped in rice and seaweed. Japanese sushi rice has a high starch content which makes it sticky when cooked. It is believed that the sushi was first made in Japan the 8th century.
Red Rice
The striking colour of Red rice is from the natural pigment found under the bran layer of the rice. Red rice originates from Bhutan, located in the Eastern Himalayas and is a long grain variety. Red rice has a bold, earthy flavour and is used commonly in dishes such as Pilaf.
Black Rice
Black rice is a short grain variety which was first grown in Ancient China. In Ancient China, Black rice was one of a number of foods which were set aside for only the Emperor and the Royal Family as it was thought to have amazing health benefits. Black rice is commonly used in rice salads and is high in antioxidants.
